🤠🍪 Cowboy Cookies
Big, chewy, and loaded with mix-ins—these classic cookies are packed with oats, chocolate, coconut, and nuts for the ultimate hearty treat!
🧾 Ingredients (Makes 18–24 cookies)
1 cup (225 g) unsalted butter, softened
1 cup (200 g) brown sugar
1/2 cup (100 g) granulated sugar
2 large eggs
2 tsp vanilla extract
Dry Ingredients:
1 3/4 cups (220 g) all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
Mix-ins:
2 cups (180 g) rolled oats
1 cup (170 g) chocolate chips
1 cup (90 g) shredded coconut
3/4 cup (90 g) chopped pecans or walnuts
👩🍳 Instructions
- Prep
Preheat oven to 180°C (350°F)
Line a baking sheet with parchment paper - Cream Butter & Sugar
Beat butter, brown sugar, and granulated sugar until light and fluffy - Add Eggs & Vanilla
Mix in eggs one at a time
Add vanilla extract - Combine Dry Ingredients
In another bowl, whisk flour, baking soda, baking powder, salt, and cinnamon - Make the Dough
Gradually mix dry ingredients into wet mixture
Fold in oats, chocolate chips, coconut, and nuts - Shape
Scoop dough into balls (about 2 tbsp each)
Place on baking sheet, spacing them apart - Bake
Bake for 10–12 minutes until edges are golden
Centers should still be soft - Cool
Let cookies cool on tray for 5 minutes, then transfer to rack
