Big, chewy, and loaded with mix-ins—these classic cookies are packed with oats, chocolate, coconut, and nuts for the ultimate hearty treat!
🧾 Ingredients (Makes 18–24 cookies)
1 cup (225 g) unsalted butter, softened
1 cup (200 g) brown sugar
1/2 cup (100 g) granulated sugar
2 large eggs
2 tsp vanilla extract
Dry Ingredients:
1 3/4 cups (220 g) all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
Mix-ins:
2 cups (180 g) rolled oats
1 cup (170 g) chocolate chips
1 cup (90 g) shredded coconut
3/4 cup (90 g) chopped pecans or walnuts
👩‍🍳 Instructions

  1. Prep
    Preheat oven to 180°C (350°F)
    Line a baking sheet with parchment paper
  2. Cream Butter & Sugar
    Beat butter, brown sugar, and granulated sugar until light and fluffy
  3. Add Eggs & Vanilla
    Mix in eggs one at a time
    Add vanilla extract
  4. Combine Dry Ingredients
    In another bowl, whisk flour, baking soda, baking powder, salt, and cinnamon
  5. Make the Dough
    Gradually mix dry ingredients into wet mixture
    Fold in oats, chocolate chips, coconut, and nuts
  6. Shape
    Scoop dough into balls (about 2 tbsp each)
    Place on baking sheet, spacing them apart
  7. Bake
    Bake for 10–12 minutes until edges are golden
    Centers should still be soft
  8. Cool
    Let cookies cool on tray for 5 minutes, then transfer to rack
