🍅🥧 Southern Tomato Pie

🧾 Ingredients (Serves 6–8)
Crust:
1 pre-made pie crust (or homemade)
Filling:
4–5 large ripe tomatoes (sliced)
1 tsp salt (for draining tomatoes)
1/2 cup mayonnaise
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 small onion (finely chopped)
2 cloves garlic (minced)
1/4 cup fresh basil (chopped)
1/4 tsp black pepper
👩🍳 Instructions
- Prep the Tomatoes
Slice tomatoes and lay them on paper towels
Sprinkle lightly with salt
Let sit for 20–30 minutes to remove excess moisture
Pat dry (this prevents a soggy pie) - Pre-Bake the Crust
Preheat oven to 180°C (350°F)
Place crust in pie dish
Bake for 8–10 minutes until lightly golden
Let cool slightly - Make the Cheese Mixture
In a bowl, mix:
mayonnaise
cheddar
mozzarella
garlic
black pepper - Assemble the Pie
Layer half the tomatoes in the crust
Add half the onion and basil
Repeat layers
Spread cheese mixture evenly on top - Bake
Bake for 30–35 minutes until top is golden and bubbly - Cool & Serve
Let sit for 10–15 minutes before slicing
