🧾 Ingredients (Makes 10–12 muffins)
🥩 Meatloaf Muffins:
500 g (1 lb) ground beef
1/2 cup breadcrumbs
1/3 cup milk
1 small onion (finely chopped)
2 cloves garlic (minced)
1 large egg
2 tbsp ketchup
1 tbsp Worcestershire sauce
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
🍯 Glaze:
1/4 cup ketchup
1 tbsp brown sugar
1 tsp mustard
🥔 Mashed Potato “Frosting”:
3–4 medium potatoes (peeled and cubed)
2 tbsp butter
1/4 cup milk (warm)
Salt & pepper to taste

  1. Prepare Potatoes
    Boil potatoes in salted water until tender (15–20 minutes)
    Drain and mash with butter, warm milk, salt, and pepper
    Mash until smooth and creamy, then set aside
  2. Make Meat Mixture
    Preheat oven to 180°C (350°F)
    In a bowl, combine:
    ground beef
    breadcrumbs + milk
    onion, garlic
    egg
    ketchup & Worcestershire
    spices
    Mix gently until combined
  3. Shape Muffins
    Grease a muffin tin
    Divide mixture evenly into cups
    Press lightly to shape
  4. Add Glaze
    Mix glaze ingredients
    Spoon a little over each meatloaf muffin
  5. Bake
    Bake for 20–25 minutes until cooked through
  6. Frost with Potatoes
    Let muffins cool slightly
    Pipe or spoon mashed potatoes on top like frosting
  7. Optional Finish
    Broil for 2–3 minutes for a lightly golden top
