Hot Water Cornbread
🧺 Ingredients (Serves 4–6)
2 cups (300 g) cornmeal
1 tsp salt
1 tbsp sugar (optional, for a hint of sweetness)
1 ½ cups (360 ml) boiling water
Oil for frying (vegetable oil or similar)

- Make the dough
In a bowl, mix cornmeal, salt, and sugar.
Carefully pour in the boiling water, stirring until you get a thick, soft dough.
Let it cool slightly so it’s safe to handle. - Shape
Scoop about 2 tablespoons of dough and shape into small patties (like thick pancakes). - Fry
Heat about 1 cm (½ inch) of oil in a skillet over medium heat.
Fry each piece for 3–4 minutes per side, until golden brown and crispy. - Drain
Place on paper towels to remove excess oil.

The dough should be moist but not runny—adjust with a little more cornmeal if needed.
