Hot Water Cornbread
🧺 Ingredients (Serves 4–6)
2 cups (300 g) cornmeal
1 tsp salt
1 tbsp sugar (optional, for a hint of sweetness)
1 ½ cups (360 ml) boiling water
Oil for frying (vegetable oil or similar)

  1. Make the dough
    In a bowl, mix cornmeal, salt, and sugar.
    Carefully pour in the boiling water, stirring until you get a thick, soft dough.
    Let it cool slightly so it’s safe to handle.
  2. Shape
    Scoop about 2 tablespoons of dough and shape into small patties (like thick pancakes).
  3. Fry
    Heat about 1 cm (½ inch) of oil in a skillet over medium heat.
    Fry each piece for 3–4 minutes per side, until golden brown and crispy.
  4. Drain
    Place on paper towels to remove excess oil.

    The dough should be moist but not runny—adjust with a little more cornmeal if needed.
    For extra flavor, add a bit of onion powder or black pepper.
