Aunt Betty’s Homestyle Noodles Romanoff
🧾 Ingredients:
12 oz egg noodles
1 cup sour cream
1 cup cottage cheese
1 cup shredded sharp cheddar cheese
½ cup grated Parmesan cheese
4 tbsp butter (melted)
2 cloves garlic, minced
½ small onion, finely chopped
1 tsp salt (or to taste)
½ tsp black pepper
1 tsp paprika (optional, for warmth)
2 tbsp chopped fresh parsley (optional)
👩‍🍳 Instructions:

  1. Cook the noodles
    Boil egg noodles in salted water until tender.
    Drain and set aside.
  2. Sauté aromatics
    In a pan, melt a bit of butter.
    Cook onion until soft, then add garlic and cook 1 minute.
  3. Make the creamy mixture
    In a large bowl, combine sour cream, cottage cheese, cheddar, and half the Parmesan.
    Stir in melted butter, onion, garlic, salt, pepper, and paprika.
  4. Combine
    Add cooked noodles and gently toss until fully coated.
  5. Bake
    Transfer to a greased baking dish.
    Sprinkle remaining Parmesan on top.
    Bake at 180°C (350°F) for 25–30 minutes until hot and bubbly.
    😋 Tips:
    For extra richness, add a splash of cream or a bit of cream cheese.
    Want protein? Add diced ham or shredded chicken.
    Broil the top for 2–3 minutes for a golden crust.
    🍽️ Serving:
    Serve warm as a main dish or side—perfect with roasted chicken, steak, or even on its own.
