Cheddar Sausage Muffins
🧾 Ingredients:
2 cups (250 g) all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika (optional)
2 large eggs
1 cup (240 ml) milk
1/3 cup (80 ml) vegetable oil or melted butter
1 1/2 cups (150 g) shredded cheddar cheese
1 cup (150–180 g) cooked sausage, crumbled or diced
2 tbsp chopped green onions (optional)
👩‍🍳 Instructions:

  1. Prep
    Preheat oven to 180°C (350°F)
    Grease a muffin tin or line with paper liners
  2. Mix dry ingredients
    In a large bowl, whisk together:
    flour
    baking powder
    salt, pepper, paprika
  3. Mix wet ingredients
    In another bowl, whisk:
    eggs
    milk
    oil or melted butter
  4. Combine
    Pour wet mixture into dry ingredients
    Stir gently until just combined (don’t overmix)
  5. Add fillings
    Fold in:
    shredded cheddar
    cooked sausage
    green onions (if using)
  6. Bake
    Divide batter evenly into muffin cups (about 3/4 full)
    Bake for 18–22 minutes, until golden and a toothpick comes out clean
  7. Cool & serve
    Let cool for 5 minutes, then serve warm
