Chicken in the Straw Salad
🧾 Ingredients
For the salad:
2 cups cooked chicken breast, shredded (or diced)
4 cups shredded lettuce (or cabbage mix)
1 cup cherry tomatoes, halved
1/2 cup cucumber, sliced
1/2 cup shredded carrots
1/4 cup red onion, thinly sliced
For the “straw” topping:
1–2 cups crispy chow mein noodles (this is the “straw”)
For the dressing:
1/2 cup mayonnaise
2 tbsp honey
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
Salt and black pepper, to taste

- Prepare the Dressing
In a bowl, whisk together:
mayonnaise
honey
Dijon mustard
apple cider vinegar
salt and pepper
Mix until smooth and creamy. - Assemble the Salad
In a large bowl, combine:
shredded chicken
lettuce
tomatoes
cucumber
carrots
red onion
Toss lightly to mix. - Add Dressing
Pour dressing over the salad and toss until everything is evenly coated. - Add the “Straw”
Just before serving, sprinkle crispy chow mein noodles generously on top.
🍽️ Tips for Best Results
Add the noodles at the last minute so they stay crunchy.
Use rotisserie chicken for extra flavor and convenience.
You can swap mayo for Greek yogurt for a lighter version.
