Slow-Braised Caramelized Short Ribs
over Creamy Parmesan Risotto
🧾 Ingredients
For the short ribs:
3 lbs beef short ribs
Salt and black pepper, to taste
2 tbsp olive oil
1 cup cola (regular, not diet)
1 cup beef broth
1/2 cup pearl onions
3 cloves garlic, minced
2 tbsp brown sugar
1 tbsp balsamic vinegar
2 sprigs fresh thyme
For the risotto:
1 cup Arborio rice
3 cups chicken or vegetable broth, warmed
1/2 cup grated Parmesan cheese
2 tbsp butter
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup dry white wine
Salt and pepper, to taste
👩‍🍳 Instructions
🔥 1. Sear the Short Ribs
Pat ribs dry and season generously with salt and pepper.
Heat olive oil in a large pot or Dutch oven over medium-high heat.
Sear ribs on all sides until deeply browned (about 2–3 minutes per side).
Remove and set aside.
🍯 2. Build the Braising Base
In the same pot, add pearl onions and cook for 2–3 minutes.
Add garlic and sauté until fragrant (about 30 seconds).
Pour in cola and scrape up browned bits from the bottom.
Add beef broth, brown sugar, balsamic vinegar, and thyme.
🍖 3. Braise
Return ribs to the pot, making sure they’re mostly submerged.
Cover and simmer on low heat (or bake at 325°F / 160°C) for 2.5–3 hours, until fork-tender.
✨ 4. Reduce the Sauce
Remove ribs and keep warm.
Simmer the remaining liquid uncovered until thickened into a glossy sauce (10–15 minutes).
Taste and adjust seasoning.
🍚 Make the Parmesan Risotto
🧄 5. Sauté the Base
In a separate pan, melt butter over medium heat.
Add onion and cook until soft (3–4 minutes).
Stir in garlic and cook briefly.
🍷 6. Toast & Deglaze
Add Arborio rice and stir for 1–2 minutes.
Pour in white wine and cook until mostly absorbed.
🥄 7. Cook the Risotto
Add warm broth one ladle at a time, stirring constantly.
Wait until liquid is absorbed before adding more.
Continue for 18–20 minutes until rice is creamy and tender.
🧀 8. Finish
Stir in Parmesan cheese.
Season with salt and pepper.
Adjust texture with a splash of broth if needed.
🍽️ To Serve
Spoon creamy risotto onto a plate.
Place a short rib on top.
Drizzle generously with the cola reduction sauce.
Garnish with fresh herbs if desired.
