Easy Chicken Quesadillas
🧾 Ingredients:
2 cups cooked chicken, shredded (rotisserie works great)
4 large tortillas
1 1/2 cups shredded cheese (cheddar, mozzarella, or a mix)
1/2 onion, thinly sliced
1/2 bell pepper, sliced
1 tbsp olive oil or butter
1/2 tsp paprika
1/2 tsp garlic powder
Salt & black pepper, to taste
👩‍🍳 Instructions

  1. Prepare filling
    Heat oil in a pan over medium heat
    Add onion and bell pepper → cook 3–4 minutes until soft
    Add chicken, paprika, garlic powder, salt & pepper
    Stir and heat through for 2–3 minutes
  2. Assemble quesadillas
    Place a tortilla in a pan
    Sprinkle a layer of cheese
    Add chicken mixture
    Top with more cheese
    Cover with another tortilla (or fold in half)
  3. Cook
    Cook on medium heat for 2–3 minutes per side
    Press lightly and flip when golden and crispy
  4. Slice & serve
    Cut into wedges and serve hot
    🌮 Optional Add-Ons:
    Jalapeños 🌶️
    Mushrooms 🍄
    Corn or black beans
    Fresh cilantro
    🥣 Dips:
    Sour cream
    Salsa
    Guacamole
    ✨ Tips:
    Use medium heat → melts cheese without burning
    Don’t overfill → easier to flip
    Mix cheeses for best flavor
