BEST Strawberry Cream Cheese Icebox Cake
🧾 Ingredients
🍓 Layers:
500 g fresh strawberries, sliced
2–3 cups graham crackers (or digestive biscuits)
🧁 Cream Filling:
2 packs (450 g total) cream cheese, softened
3/4 cup (90 g) powdered sugar
1 tsp vanilla extract
2 cups (480 ml) heavy whipping cream
👩‍🍳 Instructions

  1. Make the cream filling
    Beat cream cheese until smooth and creamy
    Add powdered sugar and vanilla → mix well
    In a separate bowl, whip cream until stiff peaks form
    Gently fold whipped cream into cream cheese mixture
  2. Assemble layers
    In a baking dish, spread a thin layer of cream
    Add a layer of graham crackers
    Spread cream over crackers
    Add a layer of sliced strawberries
    Repeat layers (crackers → cream → strawberries)
    Finish with cream on top
  3. Chill
    Cover and refrigerate for at least 6 hours (overnight is best)
  4. Decorate & serve
    Top with extra strawberries before serving
    Slice and enjoy
