Keto Herb Crackers
🧾 Ingredients:
1 cup almond flour
2 tablespoons ground flaxseed (optional, for extra crunch)
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon dried Italian herbs (or mix of oregano, thyme, rosemary)
1/2 teaspoon garlic powder
1 large egg
2 tablespoons olive oil
1–2 tablespoons water (as needed)
👩🍳 Instructions:
Preheat oven
Set to 180°C (350°F). Line a baking sheet with parchment paper.
Mix dry ingredients
In a bowl, combine almond flour, flaxseed, baking powder, salt, herbs, and garlic powder.
Add wet ingredients
Stir in egg and olive oil. Mix until a dough forms. Add a little water if it’s too dry.
Roll thin
Place dough between two sheets of parchment paper and roll very thin (about 2–3 mm).
Cut crackers
Remove top parchment and cut into squares or rectangles with a knife or pizza cutter.
Bake
Transfer to baking sheet and bake for 12–15 minutes, until golden and crisp.
Cool & crisp up
Let cool completely—they will crisp up more as they cool.
🧂 Tips:
Sprinkle sea salt or sesame seeds on top before baking.
For cheesy crackers, add 2 tablespoons grated Parmesan to the dough.
Store in an airtight container for up to 5 days.
