Cottage Cheese Chicken Enchiladas
🛒 Ingredients:
2 cups cooked chicken (shredded)
1 cup cottage cheese
1 cup shredded cheddar cheese (or Mexican blend)
½ cup sour cream (or Greek yogurt)
1 can (400–450 g) enchilada sauce (red or green)
8 small flour or corn tortillas
½ cup diced onion
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon chili powder
Salt and black pepper to taste
Fresh cilantro (optional, for garnish)
👩🍳 Instructions:
Preheat oven:
Set to 180°C (350°F). Lightly grease a baking dish.
Prepare the filling:
In a bowl, mix:
Shredded chicken
Cottage cheese
½ cup shredded cheese
Sour cream
Onion, garlic powder, cumin, chili powder
Salt & pepper
Fill tortillas:
Spoon the mixture evenly into each tortilla, roll them up, and place seam-side down in the baking dish.
Add sauce:
Pour enchilada sauce evenly over the top.
Top with cheese:
Sprinkle remaining shredded cheese over everything.
Bake:
Bake uncovered for 25–30 minutes, until hot and bubbly.
Garnish & serve:
Let cool slightly, then top with fresh cilantro if desired.

Use rotisserie chicken for extra flavor and convenience.
Add sautéed bell peppers or spinach for more veggies.
Swap tortillas for low-carb wraps if needed.
