Coconut Cookies (Soft & Chewy)
🛒 Ingredients
2 cups (160 g) shredded coconut (unsweetened or sweetened)
1 cup (200 g) sugar
2 large eggs (room temperature)
1/4 cup (60 ml) vegetable oil or melted butter
1 teaspoon vanilla extract
1/2 teaspoon baking powder
Pinch of salt
👩🍳 Instructions
1️⃣ Prepare
Preheat oven to 180°C (350°F).
Line a baking tray with parchment paper.
2️⃣ Mix Wet Ingredients
In a bowl, whisk eggs and sugar until slightly thick and pale.
Add oil (or melted butter) and vanilla. Mix well.
3️⃣ Add Dry Ingredients
Stir in shredded coconut, baking powder, and salt.
Mix until everything is combined. The dough will be sticky.
4️⃣ Shape
Scoop tablespoon-sized portions and place on tray.
Lightly flatten with your fingers or the back of a spoon.
5️⃣ Bake
Bake for 12–15 minutes or until edges are golden.
Let cool on tray 5 minutes, then transfer to a rack.
🍪 Texture Tips
✔ For crispier cookies: bake 2–3 minutes longer
✔ For softer cookies: remove when just lightly golden
✔ Add chocolate chips for coconut-chocolate cookies
