Vanilla Funfetti Cake
A soft, buttery vanilla cake packed with colorful sprinkles — perfect for birthdays, celebrations, or anytime you want a cheerful dessert.
Ingredients
1 1/2 cups all-purpose flour
1/2 cup butter, softened
3/4 cup sugar
2 eggs
1/2 cup milk
1 tsp vanilla extract
1 tsp baking powder
Pinch of salt
1/3 cup rainbow sprinkles (baking-safe/non-bleeding)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix just until combined.
Gently fold in the rainbow sprinkles. Avoid overmixing so the colors don’t bleed.
Pour the batter into the prepared pan and smooth the top.
Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Optional Frosting
Spread with vanilla buttercream and top with extra sprinkles for a classic funfetti finish.
Simple Vanilla Buttercream
1/2 cup butter, softened
2 cups powdered sugar
1–2 tbsp milk
1 tsp vanilla extract
Beat everything together until smooth and fluffy.
Tips
Use jimmies-style sprinkles for best results.
Do not overmix once the sprinkles are added.
Great as cupcakes too — bake for about 18–20 minutes.
