Oven-Baked Meatloaf and Potatoes
Ingredients
For the Meatloaf
1 ½ lbs (680 g) ground beef
1 cup breadcrumbs
1 small onion, finely chopped
2 cloves garlic, minced
2 eggs
½ cup milk
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning
Meatloaf Glaze
⅓ cup ketchup
2 tbsp brown sugar
1 tbsp mustard
For the Potatoes
1 ½ lbs baby potatoes or Yukon Gold potatoes, halved
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
1 tbsp chopped parsley (optional)
Instructions
- Prepare the Oven
Preheat oven to 375°F (190°C).
Lightly grease a large baking dish or sheet pan. - Make the Meatloaf
In a large bowl, combine:
ground beef
breadcrumbs
onion
garlic
eggs
milk
ketchup
Worcestershire sauce
salt
pepper
Italian seasoning
Mix gently until combined. Do not overmix. - Shape the Meatloaf
Form the mixture into a loaf shape in the center of the baking dish. - Prepare the Potatoes
Toss potatoes with olive oil, garlic powder, paprika, salt, and pepper.
Arrange them around the meatloaf. - Add the Glaze
Mix ketchup, brown sugar, and mustard in a small bowl.
Spread evenly over the top of the meatloaf. - Bake
Bake uncovered for 50–60 minutes, or until:
meatloaf reaches 160°F (71°C) internally
potatoes are golden and tender - Rest and Serve
Let meatloaf rest for 5–10 minutes before slicing.
Sprinkle potatoes with parsley if desired.
Optional Add-Ins
Shredded cheddar cheese inside the meatloaf
Chopped bell peppers or carrots
A dash of hot sauce for heat
