Hearty Cabbage Soup
Ingredients
2 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
4 cups green cabbage, chopped
2 carrots, sliced
2 celery stalks, chopped
2 potatoes, diced
1 can (14 oz) diced tomatoes
6 cups beef or vegetable broth
1 tsp Italian seasoning
½ tsp paprika
1 bay leaf
Salt and black pepper to taste
1 tbsp fresh parsley, chopped
Optional Add-Ins
1 lb ground beef or sausage
1 cup white beans
Red pepper flakes for heat
Corn or green beans
Instructions
- Sauté the Vegetables
Heat olive oil in a large soup pot over medium heat.
Add onion, carrots, and celery.
Cook for 5 minutes until softened.
Stir in garlic and cook for 1 minute. - Add the Main Ingredients
Add:
cabbage
potatoes
diced tomatoes
broth
Italian seasoning
paprika
bay leaf
Stir well. - Simmer
Bring soup to a boil.
Reduce heat and simmer uncovered for 25–30 minutes until vegetables are tender. - Finish the Soup
Remove bay leaf.
Taste and season with salt and pepper.
Stir in parsley before serving.
