Keto Cheesy Focaccia 🧀
A soft, cheesy, low-carb focaccia bread packed with flavor and perfect for dipping, sandwiches, or serving alongside soups and salads.
Ingredients
2 cups shredded mozzarella cheese
2 oz cream cheese
1 ½ cups almond flour
2 large eggs
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Topping
¼ cup grated parmesan cheese
1 tablespoon olive oil
Extra Italian seasoning or rosemary
Pinch of flaky salt (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking pan or small sheet tray with parchment paper.
In a microwave-safe bowl, combine mozzarella and cream cheese. Microwave in 30-second intervals, stirring each time, until melted and smooth.
Add almond flour, eggs, baking powder, salt, garlic powder, and Italian seasoning. Mix until a dough forms.
Transfer dough to the prepared pan and press into a rectangle or circle about ½ inch thick.
Use your fingertips to create small dimples across the surface.
Brush with olive oil and sprinkle with parmesan, rosemary, and extra seasoning.
Bake for 18–22 minutes until golden brown and firm.
Let cool slightly before slicing.
