BBQ Cheddar Meatloaf with Mashed Potatoes
🛒 Ingredients
For the Mashed Potato Base
1 kg (2 lbs) potatoes, peeled and cubed
4 tablespoons (60 g) butter
1/2–3/4 cup (120–180 ml) warm milk
Salt and pepper to taste
For the Meatloaf
1½ lbs (700 g) ground beef
1/2 cup breadcrumbs
1/2 cup milk
1 egg
1/2 cup finely chopped onion
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 cup BBQ sauce (plus extra for topping)
For the Topping
1½ cups shredded cheddar cheese
1 tablespoon chopped parsley (optional)
👩‍🍳 Instructions
1️⃣ Make the Mashed Potatoes
Boil potatoes in salted water for 15–20 minutes until tender.
Drain and mash with butter and warm milk.
Season with salt and pepper.
Spread mashed potatoes evenly in a greased baking dish (like in the photo).
2️⃣ Prepare the Meatloaf
Preheat oven to 190°C (375°F).
In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, paprika, and BBQ sauce.
Mix gently (don’t overwork).
Shape into a loaf or divide into thick portions and place on top of mashed potatoes.
3️⃣ Bake
Bake for 30–35 minutes.
Brush extra BBQ sauce over the top.
Sprinkle shredded cheddar cheese generously over meatloaf.
4️⃣ Melt & Finish
Return to oven for 10–15 minutes until cheese is melted and bubbly.
Optional: broil 2–3 minutes for golden top.
Sprinkle parsley before serving.
