Ground Beef Mongolian Noodles
Savory, slightly sweet, and packed with bold garlic-ginger flavor — this quick weeknight dinner is ready in about 30 minutes.
🛒 Ingredients (Serves 4)
For the Noodles
12 oz spaghetti or lo mein noodles
1 lb ground beef
For the Sauce
½ cup low-sodium soy sauce
¼ cup brown sugar
½ cup beef broth (or water)
1 tablespoon hoisin sauce (optional, for depth)
1 teaspoon sesame oil
Aromatics & Add-Ins
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
3–4 green onions, sliced
1 tablespoon cornstarch + 2 tablespoons water (slurry)
1 tablespoon vegetable oil
Optional add-ins: shredded carrots, bell peppers, broccoli, red pepper flakes.
👩‍🍳 Instructions
1️⃣ Cook the Noodles
Bring a large pot of salted water to a boil.
Cook noodles according to package directions until al dente.
Drain and set aside.
2️⃣ Brown the Beef
Heat vegetable oil in a large skillet over medium-high heat.
Add ground beef and cook until browned, breaking it apart as it cooks.
Drain excess grease if needed.
3️⃣ Add Garlic & Ginger
Add minced garlic and grated ginger.
Cook for about 30 seconds until fragrant.
4️⃣ Make the Sauce
In a bowl, whisk together:
Soy sauce
Brown sugar
Beef broth
Hoisin (if using)
Sesame oil
Pour sauce into the skillet and bring to a gentle simmer.
5️⃣ Thicken
Stir in cornstarch slurry.
Simmer 2–3 minutes until sauce thickens.
6️⃣ Combine
Add cooked noodles to the skillet.
Toss everything together until well coated.
Stir in sliced green onions (reserve some for garnish).
🍽️ Serve
Top with:
Extra green onions
Sesame seeds
Red pepper flakes (for heat)
Serve hot!
