Low-Carb Chicken Lasagna (No Noodles!)
This rich, creamy chicken lasagna swaps traditional pasta for low-carb layers — perfect if you’re cutting carbs but still craving comfort food.
🛒 Ingredients
For the “Noodle” Layers:
3–4 medium zucchini (thinly sliced lengthwise)
OR 1½–2 cups low-carb lasagna sheets (store-bought keto)
For the Chicken Filling:
2 cups cooked shredded chicken (rotisserie works great)
1 tablespoon olive oil
3 cloves garlic, minced
1 small onion, finely chopped
1 cup spinach (fresh or frozen, drained)
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon black pepper
For the Sauce:
1½ cups heavy cream
½ cup cream cheese (softened)
½ cup chicken broth
½ cup grated Parmesan cheese
½ teaspoon garlic powder
For the Cheese Layer:
1½ cups shredded mozzarella cheese
½ cup ricotta cheese (optional but recommended)
¼ cup grated Parmesan (for topping)
🔥 Instructions
1️⃣ Prepare the Zucchini
Slice zucchini lengthwise into thin strips.
Lightly salt and let sit 10–15 minutes to remove excess moisture.
Pat dry with paper towels.
(Optional) Lightly grill or bake at 375°F (190°C) for 10 minutes to reduce wateriness.
2️⃣ Make the Chicken Filling
Heat olive oil in a skillet over medium heat.
Sauté onion until soft (3–4 minutes).
Add garlic and cook 30 seconds.
Stir in shredded chicken, spinach, seasoning, salt, and pepper.
Cook 2–3 minutes. Set aside.
3️⃣ Make the Creamy Sauce
In a saucepan over medium heat:
Add heavy cream, cream cheese, and chicken broth.
Whisk until smooth.
Stir in Parmesan and garlic powder.
Simmer 3–5 minutes until slightly thickened.
4️⃣ Assemble the Lasagna
Preheat oven to 375°F (190°C).
In a greased 9×13 baking dish:
Spread a thin layer of sauce.
Add zucchini slices.
Add chicken mixture.
Spoon ricotta (if using).
Sprinkle mozzarella.
Repeat layers 2–3 times.
Finish with sauce and Parmesan on top.
5️⃣ Bake
Cover with foil and bake 25 minutes.
Remove foil and bake another 15–20 minutes until bubbly and golden.
Let rest 10–15 minutes before slicing.
