Loaded Cheesy Pocket Tacos
Crispy on the outside, gooey and loaded on the inside — perfect for dinner or game night!
Yields: 6 pocket tacos

Cook time: 15–20 minutes
🛒 Ingredients
1 pound ground beef
1 tablespoon olive oil (if needed)
1 packet taco seasoning (or 2 tablespoons homemade blend)
½ cup water
1 cup shredded cheddar cheese
1 cup shredded mozzarella or Monterey Jack
6 large flour tortillas
½ cup salsa
½ cup sour cream
½ cup diced tomatoes
¼ cup chopped green onions
Optional: sliced jalapeños, shredded lettuce
👩🍳 Instructions
1️⃣ Cook the filling:
In a skillet over medium heat, cook ground beef until browned. Drain excess grease.
Add taco seasoning and water. Simmer 3–5 minutes until thickened.
2️⃣ Assemble the pockets:
Lay tortillas flat.
Spoon beef mixture into the center of each.
Add cheddar, mozzarella, salsa, tomatoes, and green onions.
Top with a small dollop of sour cream.
Fold sides inward, then fold up from bottom to create a sealed pocket (like a burrito).
3️⃣ Cook until crispy:
Heat a clean skillet over medium heat.
Place pockets seam-side down and cook 2–3 minutes per side until golden and crispy and cheese melts.
(You can also bake at 400°F / 200°C for 10–12 minutes or air fry at 375°F / 190°C for 6–8 minutes.)
4️⃣ Serve:
Let cool slightly before cutting. Serve with extra salsa, sour cream, or guacamole.
