Slow Cooker Pork Roast (8 Hours – Fall-Apart Tender)
🛒 Ingredients (Serves 6–8)
3–4 lb pork shoulder (pork butt) or pork roast
1 tbsp olive oil
1 tbsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp dried thyme (optional)
1 onion, sliced
4 cloves garlic, smashed
1 cup chicken broth (or apple juice for sweetness)
Optional:
1 tbsp Worcestershire sauce
1 tbsp brown sugar (for slight sweetness)
👩🍳 Instructions
1️⃣ Season the Pork
Pat pork dry.
Mix salt, pepper, garlic powder, onion powder, paprika, and thyme.
Rub seasoning all over the roast.
2️⃣ Optional Sear (Extra Flavor)
Heat olive oil in a skillet.
Sear pork 2–3 minutes per side until browned.
(This step adds deeper flavor but can be skipped.)
3️⃣ Load the Slow Cooker
Place sliced onions and garlic on bottom.
Set pork on top.
Pour broth (and Worcestershire if using) around the sides — not directly on top of the seasoning.
4️⃣ Cook
Cover and cook on:
LOW: 8 hours (best result)
HIGH: 4–5 hours
Pork is done when it shreds easily with a fork (internal temp around 195–205°F for pulled pork texture).
5️⃣ Rest & Shred
Let rest 10–15 minutes.
Shred with two forks and mix with some of the cooking juices.
