Cheesy Bacon Stuffed Potatoes
Crispy skins, fluffy centers, loaded with melty cheese and crispy bacon — pure comfort food!
🛒 Ingredients (Serves 4)
4 large russet potatoes
8 slices bacon
1 ½ cups shredded cheddar cheese
½ cup sour cream
2 tbsp butter, softened
2 tbsp milk (if needed for creaminess)
2 green onions, sliced
Salt & black pepper to taste
Optional:
¼ tsp garlic powder
Extra cheese for topping
👩🍳 Instructions
1️⃣ Bake the Potatoes
Preheat oven to 400°F (200°C).
Scrub potatoes, poke holes with a fork, and rub lightly with oil and salt.
Bake directly on rack for 50–60 minutes until fork-tender.
2️⃣ Cook the Bacon
While potatoes bake, cook bacon in a skillet until crispy.
Drain and crumble once cooled.
3️⃣ Scoop & Mix
Let potatoes cool slightly.
Slice each in half lengthwise.
Carefully scoop out the inside into a bowl (leave a thin shell).
To the potato filling, add:
Butter
Sour cream
Half the cheese
Most of the bacon (reserve some for topping)
Green onions
Salt & pepper
Mash until creamy. Add a splash of milk if needed.
4️⃣ Stuff & Bake Again
Spoon filling back into potato skins.
Top with remaining cheese and bacon.
Bake at 400°F (200°C) for another 15–20 minutes until cheese is melted and bubbly.
5️⃣ Serve
Garnish with extra green onions and a dollop of sour cream.
