Onion Soup Pot Roast
Tender, melt-in-your-mouth beef slow-cooked in a rich onion gravy — simple ingredients, big comfort flavor.
🛒 Ingredients (Serves 4–6)
3–4 lb chuck roast
Salt & black pepper, to taste
1 tbsp olive oil
1 packet onion soup mix
1 large onion, sliced
3 cloves garlic, minced
1 cup beef broth
½ cup water
2 tbsp Worcestershire sauce
1 tbsp soy sauce (optional, for depth)
1 lb baby potatoes (optional)
3 carrots, chopped (optional)
1 tbsp cornstarch + 2 tbsp water (for thickening, optional)
👩‍🍳 Instructions
1️⃣ Season & Sear
Pat roast dry and season generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear roast 3–4 minutes per side until browned. (This adds deep flavor.)
2️⃣ Assemble in Slow Cooker
Place sliced onions and garlic in the bottom of the slow cooker.
Set the roast on top.
Sprinkle onion soup mix evenly over the roast.
Pour in:
Beef broth
Water
Worcestershire sauce
Soy sauce (if using)
Add potatoes and carrots around the roast if using.
3️⃣ Slow Cook
LOW: 8–9 hours
HIGH: 4–5 hours
Cook until fork-tender and easily shreddable.
4️⃣ Thicken the Gravy (Optional)
Remove roast and vegetables.
Whisk cornstarch with water and stir into slow cooker juices.
Cook on HIGH 10–15 minutes until thickened.
5️⃣ Serve
Slice or shred the roast.
Spoon rich onion gravy over the top.

Creamy mashed potatoes
Buttered egg noodles
Rice
Crusty bread
