No-Bake Chocolate Oat Nut Bars
📝 Ingredients
Base layer:
2 cups rolled oats
1 cup mixed nuts (almonds, peanuts, or cashews – roughly chopped)
½ cup dried fruit (raisins or cranberries)
½ cup peanut butter (or almond butter)
⅓ cup honey (or maple syrup)
¼ cup butter
½ cup chocolate chips
1 teaspoon vanilla extract
Pinch of salt
Chocolate topping:
1 cup milk or dark chocolate chips
1 teaspoon coconut oil (optional, for shine)
👩‍🍳 Instructions
Prepare the pan
Line an 8×8-inch (20×20 cm) pan with parchment paper.
Heat the wet ingredients
In a saucepan over low heat, melt the butter, peanut butter, and honey together.
Stir until smooth. Remove from heat and mix in vanilla and salt.
Mix the base
In a large bowl, combine oats, nuts, dried fruit, and ½ cup chocolate chips.
Pour the warm mixture over it and stir well until fully coated.
Press into pan
Transfer mixture into the prepared pan. Press down firmly and evenly.
Add chocolate topping
Melt 1 cup chocolate chips with coconut oil (microwave in 20-second intervals, stirring each time).
Spread evenly over the bars.
Chill
Refrigerate for at least 2 hours until firm.
Slice & serve
Cut into squares or bars. Store in the fridge for up to 1 week.
