Ingredients
Crust
2 cups crushed Graham Crackers (or digestive biscuits)
½ cup unsalted butter, melted
2 tablespoons sugar
Cream Cheese Layer
8 oz cream cheese, softened
1 cup powdered sugar
1 cup whipped topping (or whipped cream)
Lemon Pudding Layer
2 boxes (3.4 oz each) instant Lemon Pudding mix
3 cups cold milk
Top Layer
2 cups whipped topping
1 tablespoon lemon zest for garnish
Instructions

  • Prepare the Crust
    Preheat oven to 350°F (175°C).
    In a bowl, mix crushed graham crackers, melted butter, and sugar.
    Press the mixture firmly into the bottom of a 9×13 inch baking dish.
    Bake for 8–10 minutes, then allow it to cool completely.
  • Make the Cream Cheese Layer
    Beat cream cheese and powdered sugar until smooth.
    Fold in 1 cup whipped topping.
    Spread evenly over the cooled crust.
  • Prepare the Lemon Layer
    In a bowl, whisk instant lemon pudding mix with cold milk for about 2 minutes.
    Let it thicken slightly.
    Spread the pudding evenly over the cream cheese layer.
  • Add the Top Layer
    Spread remaining whipped topping over the pudding layer.
    Sprinkle lemon zest on top for flavor and decoration.
  • Chill
    Refrigerate for at least 3–4 hours (or overnight) before cutting into squares.
    Tips for Success
    Make sure the crust is completely cool before adding the layers.
    Chill well so the dessert cuts into clean squares.
