Introduction
These crispy zucchini patties are healthy, filling, and packed with vegetables. Combined with potatoes and carrots, then topped with melty Suluguni, they become a delicious dish that many people say tastes “better than meat.” Perfect for a light lunch, snack, or vegetarian dinner.
Ingredients
1 medium Zucchini
2 medium Potato
1 Carrot
100 g Suluguni, grated
2 Egg
3–4 tablespoons flour
2 tablespoons chopped parsley or dill
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons olive oil for frying
Optional Additions
1 small onion, finely chopped
1 garlic clove, minced
½ teaspoon paprika
2 tablespoons breadcrumbs for extra crispiness
Instructions

  1. Prepare the Vegetables
    Grate the zucchini, potatoes, and carrot using a coarse grater.
  2. Remove Excess Moisture
    Place the grated zucchini in a clean towel and squeeze out the extra liquid. This helps the patties stay crispy.
  3. Mix the Batter
    In a large bowl combine:
    grated zucchini
    grated potatoes
    grated carrot
    grated Suluguni cheese
    eggs
    flour
    parsley
    salt and pepper
    Mix until everything is well combined.
  4. Shape the Patties
    Take a spoonful of the mixture and form small patties.
  5. Cook
    Heat olive oil in a skillet over medium heat. Fry the patties for 3–4 minutes per side until golden brown and crispy.
  6. Drain
    Place on paper towels to remove excess oil.
  7. Serve
    Serve warm with yogurt sauce, sour cream, or a fresh salad.

    Squeezing the zucchini well is the key to crispy patties.
    Use medium heat so they cook through without burning.
