Zucchini Vegetable & Cheese Patties
Introduction

Ingredients
1 medium Zucchini
2 medium Potato
1 Carrot
100 g Suluguni, grated
2 Egg
3–4 tablespoons flour
2 tablespoons chopped parsley or dill
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons olive oil for frying
Optional Additions
1 small onion, finely chopped
1 garlic clove, minced
½ teaspoon paprika
2 tablespoons breadcrumbs for extra crispiness
Instructions
- Prepare the Vegetables
Grate the zucchini, potatoes, and carrot using a coarse grater. - Remove Excess Moisture
Place the grated zucchini in a clean towel and squeeze out the extra liquid. This helps the patties stay crispy. - Mix the Batter
In a large bowl combine:
grated zucchini
grated potatoes
grated carrot
grated Suluguni cheese
eggs
flour
parsley
salt and pepper
Mix until everything is well combined. - Shape the Patties
Take a spoonful of the mixture and form small patties. - Cook
Heat olive oil in a skillet over medium heat. Fry the patties for 3–4 minutes per side until golden brown and crispy. - Drain
Place on paper towels to remove excess oil. - Serve
