🍗 For the honey lime chicken:
500 g chicken breast, diced or sliced
2 tbsp honey
3 tbsp lime juice (fresh is best)
1 tbsp olive oil
2 cloves garlic, minced
1 tsp paprika
½ tsp cumin
Salt and black pepper, to taste
🍚 For the avocado rice:
2 cups cooked white rice (warm or slightly cooled)
1 large avocado, mashed
2 tbsp lime juice
2 tbsp fresh cilantro, chopped
Salt, to taste
🥗 Optional toppings:
Cherry tomatoes, halved
Corn (fresh or canned)
Black beans
Red onion, finely chopped
Extra cilantro
Lime wedges
👩🍳 Instructions
- Marinate the chicken
In a bowl, mix:
Honey
Lime juice
Olive oil
Garlic
Paprika, cumin, salt, and pepper
Add chicken and toss to coat.
Let marinate for 15–30 minutes (or longer for more flavor). - Cook the chicken
Heat a pan over medium-high heat.
Cook the chicken for 6–8 minutes, stirring occasionally, until fully cooked and slightly caramelized.
Set aside. - Prepare the avocado rice
In a bowl, mix:
Cooked rice
Mashed avocado
Lime juice
Cilantro
Salt
Stir until creamy and well combined. - Assemble the stack
Use a bowl or ring mold for a neat stack:
Add a layer of avocado rice
Top with honey lime chicken
Add toppings like tomatoes, corn, or beans
Gently lift the mold to reveal the stack.
