Pan-Seared Pork Chops in Savory Brown Sauce
📝 Ingredients:
4 bone-in or boneless pork chops (about 2.5 cm thick)
Salt and black pepper, to taste
1 teaspoon garlic powder
1 teaspoon onion powder
2 tablespoons olive oil
2 tablespoons butter
For the Brown Sauce:
1 medium onion, finely sliced
3 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups beef broth (or chicken broth)
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard (optional)
½ teaspoon dried thyme (or Italian seasoning)
Salt and pepper, to taste
👩‍🍳 Instructions:
Season the Pork Chops
Pat dry and season both sides with salt, pepper, garlic powder, and onion powder.
Sear the Chops
Heat olive oil in a large skillet over medium-high heat.
Add pork chops and sear for 4–5 minutes per side until golden brown.
Remove from skillet and set aside.
Make the Flavor Base
In the same skillet, reduce heat to medium and melt butter.
Add sliced onions and cook until soft and lightly caramelized (about 5–7 minutes).
Stir in minced garlic and cook for 1 minute.
Create the Sauce
Sprinkle flour over the onions and stir for 1–2 minutes to cook out the raw taste.
Gradually whisk in broth, making sure no lumps form.
Add Seasoning
Stir in Worcestershire sauce, Dijon mustard, and thyme.
Let the sauce simmer until it thickens slightly (about 3–5 minutes).
Return Pork Chops
Place the pork chops back into the skillet, spooning sauce over them.
Cover and simmer on low heat for 10–15 minutes, or until fully cooked and tender.
Serve
Taste and adjust seasoning if needed.
Serve hot with mashed potatoes, rice, or crusty bread.
🍽️ Tips:
For extra richness, add a splash of cream at the end.
Mushrooms can be added with the onions for deeper flavor.
Let the pork rest a few minutes before serving for juicier meat.
