🧾 Ingredients
1.2–1.5 kg (2.5–3 lb) pork loin
3–4 apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
1 large onion, sliced
3 cloves garlic, minced
1 cup apple juice or apple cider
¼ cup brown sugar
2 tbsp Dijon mustard
1 tsp ground cinnamon
½ tsp ground nutmeg
1 tsp salt
½ tsp black pepper
2 tbsp butter, cut into small pieces
Optional gravy:
1 tbsp cornstarch
2 tbsp cold water
👩‍🍳 Instructions
Layer the base:
Place sliced apples and onions in the bottom of the slow cooker. Sprinkle with garlic.
Season the pork:
Rub pork loin with salt, pepper, cinnamon, and nutmeg. Place it on top of the apples.
Mix sauce:
In a bowl, whisk together apple juice, brown sugar, and Dijon mustard.
Pour over the pork.
Add butter:
Dot the top of the pork with small pieces of butter.
Cook:
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until pork is tender and cooked through.
Rest & slice:
Remove pork and let rest 5–10 minutes before slicing.
(Optional) Make gravy:
Mix cornstarch and cold water. Stir into the slow cooker juices.
Cook on HIGH for 10–15 minutes until thickened.
Serve:
Slice pork and spoon apples, onions, and sauce over the top.
