Cottage Cheese & Spinach Crustless Quiche
📝 Ingredients
1 cup cottage cheese
6 large eggs
1 cup fresh spinach, chopped (or ½ cup frozen, thawed & drained)
½ cup shredded cheese (cheddar, mozzarella, or your choice)
¼ cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil or butter
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon nutmeg (optional, but adds warmth)
👩‍🍳 Instructions
Preheat oven
Set to 180°C (350°F).
Lightly grease a baking dish or pie pan.
Cook the aromatics
Heat olive oil in a pan over medium heat.
Sauté onion for 3–4 minutes until soft.
Add garlic and spinach, cook until wilted (or heated through if using frozen).
Remove from heat.
Prepare the egg mixture
In a large bowl, whisk eggs, milk, cottage cheese, salt, pepper, and nutmeg.
Combine everything
Stir in the cooked spinach mixture and shredded cheese.
Bake
Pour into the prepared dish.
Bake for 35–40 minutes, or until set in the center and lightly golden on top.
Cool & serve
Let it rest for 5–10 minutes before slicing.
Serve warm or at room temperature.
💡 Tips & Variations
Add cooked mushrooms, bell peppers, or zucchini for more veggies.
Mix in cooked chicken or turkey for extra protein.
Use feta instead of shredded cheese for a tangy twist.
Sprinkle fresh herbs (parsley, dill) on top before serving.
