Milk Brioche Rolls
Soft, rich, buttery brioche rolls with a light fluffy texture and a beautiful golden top. These homemade rolls are perfect for breakfast, sandwiches, or served warm with butter and jam.
Ingredients
4 cups all-purpose flour
2 large eggs, room temperature
1 cup whole milk, warmed to about 110°F (43°C)
1/4 cup granulated sugar
2 1/4 teaspoons active dry yeast (1 packet)
1 teaspoon salt
1/2 cup unsalted butter, softened
1 egg + 1 tablespoon milk (for egg wash)
Optional Additions
Honey instead of sugar for a richer flavor
Sesame or poppy seeds for topping
A little vanilla extract for sweeter rolls
Instructions
Step 1: Activate the Yeast
In a bowl, combine warm milk, sugar, and yeast.
Let sit for 5–10 minutes until foamy.
Step 2: Make the Dough
In a large mixing bowl, combine flour and salt.
Add eggs and yeast mixture.
Mix until a dough forms.
Gradually add softened butter a little at a time, kneading well after each addition.
Step 3: Knead
Knead the dough for about 8–10 minutes until smooth, elastic, and slightly tacky.
If using a stand mixer, knead with a dough hook on medium speed for about 6 minutes.
Step 4: First Rise
Place dough in a lightly greased bowl.
Cover and let rise in a warm place for 1–2 hours, or until doubled in size.
Step 5: Shape the Rolls
Punch down the dough.
Divide into 12 equal portions.
Shape each into a smooth ball.
Arrange in a greased baking dish or lined baking tray.
Step 6: Second Rise
Cover loosely and let rise again for 45–60 minutes until puffy.
Step 7: Bake
Preheat oven to 350°F (175°C).
Brush tops with egg wash.
Bake for 20–25 minutes until deeply golden brown.

Room-temperature eggs and softened butter help create a smooth dough.
Do not overheat the milk or it may kill the yeast.
Brioche dough is naturally soft and slightly sticky.
Brush with melted butter after baking for extra softness and shine.
