Zucchini Chicken Fritters with Garlic Herb Aioli
Crispy on the outside, juicy on the inside, these zucchini chicken fritters make a delicious lunch, dinner, or appetizer. Served with a creamy garlic herb aioli for extra flavor.
Ingredients
For the Fritters
2 cups shredded zucchini
1 pound ground chicken
1/2 cup grated Parmesan cheese
1/3 cup breadcrumbs
1 egg
2 cloves garlic, minced
2 green onions, chopped
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil (for frying)
For the Garlic Herb Aioli
1/2 cup mayonnaise
1 clove garlic, finely minced
1 tablespoon lemon juice
1 tablespoon chopped parsley
1 teaspoon chopped dill or chives
Pinch of salt and pepper
Instructions
Prepare the Zucchini
Place shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
Make the Fritters
In a large bowl, combine zucchini, ground chicken, Parmesan, breadcrumbs, egg, garlic, green onions, Italian seasoning, salt, and pepper. Mix until well combined.
Form the mixture into small patties.
Heat olive oil in a large skillet over medium heat.
Cook fritters for 4–5 minutes per side, or until golden brown and fully cooked through.
Make the Aioli
In a small bowl, stir together mayonnaise, garlic, lemon juice, parsley, dill, salt, and pepper.
Serve fritters warm with garlic herb aioli on the side.
Optional Additions
Add crushed red pepper flakes for heat
Mix in shredded cheddar or mozzarella cheese
Use panko breadcrumbs for extra crispiness
Top with fresh herbs before serving
