Biscuits and Sausage Gravy
A true Southern comfort classic — fluffy, buttery biscuits covered in rich, creamy, peppery sausage gravy. Hearty, cozy, and perfect for breakfast or brunch.
🛒 Ingredients
For the Sausage Gravy:
1 lb breakfast sausage (pork)
3 tablespoons all-purpose flour
2½ cups whole milk
½ teaspoon salt (adjust to taste)
1–1½ teaspoons freshly ground black pepper
¼ teaspoon garlic powder (optional)
Pinch of crushed red pepper (optional)
For the Biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon sugar
½ teaspoon salt
½ cup cold unsalted butter (cubed)
¾ cup cold milk or buttermilk
(Or use store-bought refrigerated biscuits for convenience.)
👩‍🍳 Instructions
1️⃣ Make the Biscuits
Preheat oven to 425°F (220°C).
In a bowl, whisk flour, baking powder, sugar, and salt.
Cut in cold butter using a pastry cutter or fork until crumbly.
Stir in milk just until dough forms (don’t overmix).
Turn onto floured surface, gently pat to 1-inch thickness.
Cut into rounds and place on baking sheet.
Bake 12–15 minutes until golden brown.
2️⃣ Make the Sausage Gravy
In a large skillet over medium heat, cook sausage until browned and fully cooked.
(Do not drain the fat — that’s flavor!)
Sprinkle flour over sausage and stir constantly for 1–2 minutes.
Slowly pour in milk while stirring to prevent lumps.
Simmer 5–7 minutes until thick and creamy.
Add salt, black pepper, garlic powder, and red pepper if using.
Adjust seasoning — it should be nicely peppery.
3️⃣ Assemble
Split warm biscuits in half.
Spoon generous sausage gravy over the top.
Serve immediately.
