🛒 Ingredients
1 whole chicken, cut into 8–10 pieces
2 cups buttermilk
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon cayenne pepper (optional for heat)
1 teaspoon dried thyme (optional)
Vegetable oil, for frying
👩🍳 Instructions
1️⃣ Marinate
Place chicken in a large bowl.
Pour buttermilk over the chicken, making sure all pieces are coated.
Cover and refrigerate at least 4 hours, preferably overnight (this makes it super tender).
2️⃣ Season the Flour
In a large bowl, mix:

Salt
Black pepper
Paprika
Garlic powder
Onion powder
Cayenne
Thyme
3️⃣ Dredge
Remove chicken from buttermilk (let excess drip off).
Coat each piece thoroughly in seasoned flour.
Press flour onto the chicken for a thick crust.
Let coated chicken rest 10–15 minutes (helps crust stick).
4️⃣ Fry
Heat oil in a deep skillet or Dutch oven to 350°F (175°C).
Fry chicken in batches (don’t overcrowd).
Cook 12–15 minutes per side depending on size.
Internal temperature should reach 165°F (74°C).
5️⃣ Drain & Rest
Transfer to a wire rack (not paper towels — keeps it crispy).
Rest 5–10 minutes before serving.

For ultra crispy chicken, double-dip:
Flour → buttermilk → flour again before frying.
