Amish Snow Day Soup
Hearty, creamy, and comforting — the kind of soup you make when it’s cold outside and you want something filling and simple.
🛒 Ingredients
1 lb ground beef (or ground turkey)
1 small onion, diced
2 cloves garlic, minced
3 medium potatoes, peeled and diced
3 carrots, sliced
2 celery stalks, chopped
4 cups chicken or beef broth
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried parsley
½ teaspoon dried thyme
1½ cups milk
½ cup heavy cream (optional, for extra richness)
2 tablespoons flour (to thicken)
2 tablespoons butter
👩‍🍳 Instructions
1️⃣ Brown the Meat
In a large pot over medium heat, cook ground beef until browned.
Drain excess grease.
Add onion and garlic; cook 2–3 minutes until softened.
2️⃣ Add Vegetables & Broth
Stir in potatoes, carrots, celery, salt, pepper, parsley, and thyme.
Pour in broth.
Bring to a boil, then reduce heat and simmer 20–25 minutes, until vegetables are tender.
3️⃣ Make It Creamy
In a small saucepan, melt butter.
Stir in flour and cook 1–2 minutes (makes a roux).
Slowly whisk in milk until smooth and slightly thickened.
Add cream if using.
4️⃣ Combine
Stir milk mixture into the soup.
Simmer another 5 minutes until thick and creamy.
Adjust salt and pepper to taste.
