Lemon Curd Cookies
Soft, buttery cookies with a bright, tangy lemon curd center — sweet, zesty, and absolutely irresistible.
🛒 Ingredients
For the Cookies:
½ cup (1 stick) unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 tablespoon lemon zest
1½ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
For the Filling:
½ cup lemon curd (store-bought or homemade)
Powdered sugar, for dusting (optional)
👩🍳 Instructions
1️⃣ Preheat
Preheat oven to 350°F (175°C).
Line a baking sheet with parchment paper.
2️⃣ Make the Dough
Cream butter and sugar until light and fluffy (2–3 minutes).
Beat in egg, vanilla, and lemon zest.
In a separate bowl, whisk flour, baking powder, and salt.
Gradually mix dry ingredients into wet ingredients until combined.
3️⃣ Shape
Roll dough into 1-inch balls.
Place on baking sheet about 2 inches apart.
Use your thumb (or the back of a spoon) to gently press a small indent in the center of each cookie.
4️⃣ Fill
Spoon about ½ teaspoon lemon curd into each indentation.
5️⃣ Bake
Bake 10–12 minutes, until edges are lightly golden.
Let cool on pan 5 minutes, then transfer to wire rack.
6️⃣ Finish
Dust with powdered sugar once completely cool.
