Best Southern Fried Pork Chops
Golden, crunchy outside… juicy and tender inside. This is true Southern comfort food!
🛒 Ingredients
1¼ lb bone-in pork chops (about 4 chops)
2 cups whole milk
1½ cups all-purpose flour
1 cup panko breadcrumbs
2 tablespoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon cayenne pepper (optional)
Vegetable oil, for frying
👩🍳 Instructions
1️⃣ Tenderize & Soak
Pat pork chops dry.
Lightly pound to even thickness (optional but helps tenderness).
Place in a bowl and cover with milk.
Refrigerate at least 1 hour (overnight is even better).
2️⃣ Prepare Breading
In a shallow bowl, mix:
Flour
Panko
Paprika
Garlic powder
Onion powder
Salt
Pepper
Cayenne
3️⃣ Coat the Chops
Remove chops from milk (let excess drip off).
Dredge thoroughly in flour mixture.
Press coating firmly onto both sides.
Let rest 10 minutes (helps crust stick).
4️⃣ Fry
Heat ½ inch of oil in a heavy skillet to 350°F (175°C).
Fry 4–5 minutes per side until golden brown.
Internal temp should reach 145°F (63°C).
5️⃣ Drain & Rest
Transfer to a wire rack (not paper towels).
Rest 5 minutes before serving.
