Zero (Very Low) Carb Chicken Carrot Spread
⚠️ Quick note: Carrots naturally contain carbs, so this spread is very low carb, but not technically zero carb. If you want truly zero carb, I’ll share a version without carrots below.
🛒 Ingredients
2 cups cooked chicken breast (shredded or chopped)
¼ cup very finely grated carrot (about 1 small carrot)
4 oz cream cheese, softened
2 tbsp mayonnaise
1 tsp garlic powder
½ tsp onion powder
Salt & black pepper to taste
1 tsp lemon juice (optional)
👩🍳 Instructions
1️⃣ Blend the chicken
In a food processor, pulse the cooked chicken until finely shredded.
2️⃣ Add creamy ingredients
Add cream cheese, mayo, garlic powder, onion powder, salt, pepper, and lemon juice. Blend until smooth.
3️⃣ Add carrot
Stir or pulse in the finely grated carrot (don’t over-blend if you want tiny texture bits).
4️⃣ Chill
Refrigerate for at least 30 minutes to let flavors develop.
🍽️ How to Serve (Low Carb Ideas)
Spread on lettuce wraps
Stuff into cucumber boats
Serve with celery sticks
Use in low-carb tortillas
🔥 TRUE Zero-Carb Version (No Carrots)
Replace carrot with:
1 tbsp chopped fresh parsley
or
1 tsp smoked paprika
Everything else stays the same.
