Popeyes Copycat Fried Chicken

This homemade version gives you that crunchy, well-seasoned coating with tender, juicy chicken inside.
🛒 Ingredients
2 lbs chicken pieces (drumsticks, thighs, wings)
2 cups buttermilk
2 cups all-purpose flour
1 tbsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp black pepper
1/2 tsp cayenne pepper (optional, for heat)
1 tsp dried thyme (optional but recommended)
1 tsp baking powder (for extra crispiness)
Vegetable oil for frying
👩🍳 Instructions
1️⃣ Marinate the Chicken
Place chicken in a large bowl.
Pour buttermilk over it, making sure it’s fully covered.
Cover and refrigerate at least 4 hours, preferably overnight.
This step makes the chicken super tender and flavorful.
2️⃣ Prepare the Seasoned Flour
In a large bowl, mix:
Flour
Paprika
Garlic powder
Onion powder
Salt
Black pepper
Cayenne (if using)
Thyme
Baking powder
Stir well to combine.
3️⃣ Coat the Chicken
Remove chicken from buttermilk (let excess drip off).
Dredge each piece in the seasoned flour.
Press flour firmly onto the chicken for a thick coating.
For extra crunch: dip back into buttermilk, then coat again in flour (double dredge).
Let coated chicken rest on a rack for 10–15 minutes before frying.
4️⃣ Fry to Crispy Perfection
Heat oil in a deep pot to 350°F (175°C).
Carefully add chicken (don’t overcrowd).
Fry 12–15 minutes, turning occasionally, until golden brown and internal temperature reaches 165°F (74°C).
Remove and drain on a wire rack (not paper towels — keeps it crispy).
5️⃣ Serve Hot
Serve immediately with coleslaw, fries, or biscuits.
