A rich and comforting dish where tender beef chuck slowly braises in dark stout beer. With just a couple of simple ingredients, the beer creates a deep, savory gravy that makes this hearty meal perfect for a cozy dinner.
Ingredients
2 lbs (900 g) beef chuck, cut into large cubes
1 bottle (12 oz / 355 ml) dark stout beer
1 large onion, sliced
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon thyme (optional)
1 cup beef broth (optional for extra sauce)
Instructions
Preheat the Dutch oven
Heat olive oil in a Dutch oven over medium-high heat.
Brown the beef
Add the beef chuck cubes in batches and sear them until nicely browned on all sides. Remove and set aside.
Cook the aromatics
In the same pot, add the sliced onion and cook for about 4 minutes until soft. Add garlic and cook another minute.
Add the stout beer
Return the beef to the pot. Pour the dark stout beer over the meat. Add salt, pepper, thyme, and beef broth if using.
Slow braise
Bring to a gentle simmer, cover, and cook on low heat for 2–2½ hours, or until the beef is fork-tender.
(You can also place the covered Dutch oven in the oven at 325°F / 160°C.)
Finish the stew
Stir occasionally. If the sauce is thin, simmer uncovered for 10–15 minutes to thicken.
