2 cups apple cider
1 medium onion, sliced
3 cloves garlic, minced
2 tablespoons brown sugar

1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper

Layer the slow cooker
Place the sliced onions and garlic in the bottom of a slow cooker.
Add the pork
Put the seasoned pork shoulder on top of the onions.
Mix the sauce
In a bowl, combine apple cider, brown sugar, Dijon mustard, apple cider vinegar, and thyme.
Cook the pork
Pour the apple cider mixture over the pork. Cover and cook:

High: 4–5 hours
Shred the meat
Once tender, remove the pork and shred it with two forks.
Return to sauce
Put the shredded pork back into the slow cooker and mix with the juices. Cook for another 15–20 minutes to absorb the flavor.
