Roasted potatoes with warm blue cheese sauce are crispy, flavorful, and rich. The golden roasted Potato pairs perfectly with a creamy sauce made from tangy Blue cheese and smooth Heavy cream, making this dish an elegant side for dinner.
Ingredients
2 pounds small Potato, halved
2 tablespoons Olive oil
1 teaspoon fresh Rosemary, finely chopped
Salt and freshly ground black pepper, to taste
½ cup Heavy cream
½ cup crumbled Blue cheese
⅛ teaspoon Nutmeg
Instructions
- Preheat the Oven
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease it. - Prepare the Potatoes
Place the halved potatoes in a large bowl. Drizzle with olive oil and sprinkle with rosemary, salt, and black pepper. Toss well to coat evenly. - Roast the Potatoes
Spread the potatoes cut-side down on the baking sheet. Roast for 30–35 minutes, turning halfway through, until golden brown and crispy. - Make the Blue Cheese Sauce
In a small saucepan over medium-low heat, add the heavy cream and bring it to a gentle simmer. Stir in the crumbled blue cheese and nutmeg. - Melt the Cheese
Cook while stirring until the cheese melts and the sauce becomes smooth and creamy (about 3–5 minutes). - Serve
Transfer the roasted potatoes to a serving dish and drizzle the warm blue cheese sauce over the top, or serve the sauce on the side for dipping.
Tips for Best Results
Use small waxy potatoes like baby Yukon Gold for better roasting.
Roast potatoes cut-side down for extra crispiness.
Keep the sauce on low heat so the cheese melts smoothly without separating.
