🥦🍞 Low Carb Cauliflower Bread
A soft, light, and low-carb bread made with cauliflower—perfect for sandwiches, toast, or as a healthy side!
🧾 Ingredients (Makes 1 small loaf or 6–8 slices)
1 medium cauliflower head (about 3 cups riced cauliflower)
2 large eggs
1 cup (100 g) shredded mozzarella cheese
1/4 cup (25 g) grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried oregano (optional)
1/2 tsp baking powder
👩🍳 Instructions
- Prepare the Cauliflower
Cut cauliflower into florets
Pulse in a food processor until it looks like rice
Microwave for 5–7 minutes until soft
Let cool, then squeeze out as much moisture as possible using a clean towel - Make the Dough
In a bowl, combine:
cauliflower
eggs
mozzarella
Parmesan
spices
baking powder
Mix until a thick, dough-like consistency forms - Shape
Preheat oven to 180°C (350°F)
Line a baking tray with parchment paper
Shape mixture into a loaf or flat bread (about 1–2 cm thick) - Bake
Bake for 25–30 minutes until golden and firm - Cool & Slice
Let cool slightly before slicing (it firms up as it cools)
