Meatloaf with Mashed Potatoes
🧾 Ingredients
🥩 Meatloaf:
500 g ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 egg
1/2 cup (50 g) breadcrumbs
1/4 cup (60 ml) milk
2 tbsp ketchup
1 tbsp mustard (optional)
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
🍅 Glaze:
3 tbsp ketchup
1 tbsp brown sugar
1 tsp mustard
🥔 Mashed Potatoes:
1 kg potatoes, peeled and chopped
3 tbsp butter
1/2 cup (120 ml) milk (warm)
Salt, to taste
Black pepper (optional)
👩‍🍳 Instructions

  1. Make the meatloaf
    Preheat oven to 180°C (350°F)
    In a bowl, mix:
    ground beef
    onion, garlic
    egg
    breadcrumbs + milk
    ketchup, mustard
    salt, pepper, paprika
    Mix until just combined (don’t overmix)
  2. Shape & bake
    Shape into a loaf and place in a baking dish
    Mix glaze ingredients and spread on top
    Bake for 45–55 minutes until cooked through
  3. Cook potatoes
    Boil potatoes in salted water for 15–20 minutes until tender
    Drain well
  4. Mash
    Add butter and warm milk
    Mash until smooth and creamy
    Season with salt and pepper
    🍽️ Serve:
    Slice meatloaf and serve with mashed potatoes
    Spoon extra glaze or juices over the top
