Berry Cheesecake Salad
🧾 Ingredients:
200 g cream cheese (softened)
1 cup (240 ml) heavy whipping cream (cold)
1/3–1/2 cup powdered sweetener (erythritol or preferred keto sweetener)
1 tsp vanilla extract
1 tbsp lemon juice (optional, for freshness)
🍓 Berries:
1 cup strawberries, sliced
1/2 cup blueberries
1/2 cup raspberries
1/2 cup blackberries
👩🍳 Instructions:
- Make the cheesecake base
In a bowl, beat cream cheese until smooth
Add sweetener and vanilla, mix well - Whip the cream
In another bowl, whip heavy cream until soft peaks form - Combine
Gently fold whipped cream into the cream cheese mixture
Add lemon juice if using - Add berries
Gently fold in all the fresh berries
(or reserve some for topping) - Chill
Refrigerate for 30–60 minutes before serving
🍨 Serving:
Serve chilled in bowls or dessert cups
Top with extra berries or a sprinkle of crushed nuts
