Easy Cabbage Soup
🧾 Ingredients:
1 small head of cabbage (chopped)
2 carrots (sliced)
2 celery stalks (chopped)
1 onion (diced)
3 cloves garlic (minced)
2 tablespoons olive oil
1 can (400 g) diced tomatoes (with juice)
1.5 liters vegetable broth (or chicken broth)
1 teaspoon paprika
1/2 teaspoon dried thyme
Salt and black pepper (to taste)
Optional: 1 potato (diced) or 1 zucchini (chopped)
👩‍🍳 Instructions:
Sauté the base
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5 minutes until softened.
Add garlic
Stir in garlic and cook for 1 minute until fragrant.
Add cabbage
Toss in the chopped cabbage and cook for another 3–4 minutes, stirring occasionally.
Add liquids & seasoning
Pour in the diced tomatoes and broth. Add paprika, thyme, salt, and pepper.
Simmer
Bring to a boil, then reduce heat and let simmer for 25–30 minutes until vegetables are tender.
Taste & adjust
Adjust seasoning if needed. Add a squeeze of lemon for brightness (optional).
🍲 Tips:
Add cooked chicken or ground beef for extra protein.
For a spicy kick, add chili flakes.
This soup tastes even better the next day!
