Asparagus Stuffed Chicken Breast
🛒 Ingredients:
4 boneless, skinless chicken breasts
12–16 asparagus spears (trimmed)
1 cup shredded mozzarella or provolone cheese
2–3 cloves garlic (minced)
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon Italian seasoning
Salt and black pepper to taste
Optional: ¼ cup grated Parmesan cheese
👩‍🍳 Instructions:
Preheat oven:
Set to 200°C (400°F). Lightly grease a baking dish.
Prepare chicken:
Slice a pocket into each chicken breast (don’t cut all the way through).
Season inside and outside with salt, pepper, paprika, and Italian seasoning.
Make the filling:
In a bowl, mix cheese with minced garlic.
Stuff the chicken:
Place 3–4 asparagus spears inside each chicken breast.
Add a generous spoon of the cheese mixture.
Secure with toothpicks if needed.
Sear (optional but recommended):
Heat olive oil in a pan over medium-high heat.
Sear chicken for 2–3 minutes per side until lightly golden.
Bake:
Transfer to the baking dish.
Sprinkle Parmesan on top if using.
Bake for 20–25 minutes, or until chicken is cooked through (internal temp 75°C / 165°F).
Serve:
Let rest a few minutes before serving.
💡 Tips:
Add sun-dried tomatoes for extra flavor 🌞
Swap mozzarella for cream cheese for a richer filling
Serve with rice, roasted potatoes, or a fresh salad
