Simple & Delicious Banitsa
🧾 Ingredients
400 g phyllo (filo) dough
3 eggs
1 cup yogurt (plain)
1/2 cup milk
200 g feta cheese (crumbled)
1/2 cup melted butter or oil
1/2 teaspoon baking soda
Pinch of salt
👩🍳 Instructions
Preheat oven
Set to 180°C (350°F) and grease a baking dish.
Prepare filling
In a bowl, whisk eggs, yogurt, milk, baking soda, and salt.
Stir in crumbled feta cheese.
Layer the pastry
Place one sheet of phyllo in the dish, brush lightly with butter.
Add another sheet and brush again.
Pour some filling over it.
Repeat layers
Continue layering phyllo + butter + filling until everything is used.
Finish top
End with 2–3 sheets on top and brush generously with butter.
Bake
Bake for 35–40 minutes until golden and crispy.
Serve
Let cool slightly, then slice and enjoy warm.

Use sparkling water instead of milk for a lighter texture
