🧾 Ingredients
For the Fish:
2 white fish fillets (cod, pollock, or hake)
1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 cup cold sparkling water (or cold water)
Oil for frying
For the Tartar Sauce:
1/2 cup mayonnaise
1 tablespoon finely chopped pickles or relish
1 teaspoon lemon juice
1/2 teaspoon mustard
Pinch of salt
For Assembly:
2 soft burger buns
2 slices processed cheese (half slice per sandwich like original)
Optional: lettuce (not traditional but tasty)

- Make the tartar sauce
Mix mayonnaise, pickles, lemon juice, mustard, and salt.
Chill in the fridge while preparing the rest. - Prepare the batter
In a bowl, mix flour, cornstarch, baking powder, salt, and paprika.
Slowly whisk in cold sparkling water until smooth (thick but pourable). - Fry the fish
Heat oil to medium-high (about 170–180°C).
Dip fish fillets into batter, coat well.
Fry for 4–5 minutes until golden and crispy.
Remove and drain on paper towels. - Steam or toast buns
Lightly steam buns for softness (like the original), or toast if you prefer a bit of crunch. - Assemble
Spread tartar sauce on bottom bun
Add half slice of cheese
Place crispy fish on top
Add more sauce
Cover with top bun

Use very cold batter → makes fish extra crispy
Don’t overcrowd the pan when frying
For authentic taste, keep it simple (no lettuce)
Use soft, slightly sweet buns
